ABUELA J's TAQUERIA



Hola! Come join me in my kitchen. I'm, cooking up a zero carb taco salad for dinner tonight, and I want to share it with you.

Remember the tasty cheese crisp snack we made the other day? Well, if you spread it out in a circle, then microwave it and immediately mold it over the bottom of a bowl, you will have a crispy cheese taco tortilla bowl-ish thing. I didn't take a picture of this step because the melted cheese is very hot, and you have to hold it in place, pressed against the bowl until it cools a bit (of course the parchment paper is between your hands and the cheese.....duh). It holds its shape once it cools and hardens. Have a set of oven mitts or pot holders ready because it's very hot. I already said that didn't I?

Brown some ground beef in a frying pan, and when it's almost done add some water and...



Some taco mix. I like Taco Bell brand, but Lawry's, Schilling and McCormick's all have the same nutritional values....


1 gram of carbs per serving. I use less, just enough for flavoring, so the % of cheating is pretty much zilch unless you want to get technical. Please don't get too technical. It's not like I'm having an Oreo Cookie Blizzard at DQ. Yeah, because that has 103 carbs.


I fill my cheese tortilla with shredded lettuce, sprinkled with this.....
Mrs. Dash! I swear this is flavored cardboard bits because there is absolutely no nutritional value....



None whats so ever! Why can't they do that with Oreo Cookie Blizzards?


Here is the finished taco salad. I don't like dressings and salsa on mine. The taco seasoning and Mrs. Dash is plenty for me, and the cheesy shell adds flavor too.

Sometimes I think you couldn't get any cooler...and then, a post like this pops up! You got cooler!

I wish I could make one tonight. I made carb free meatloaf last night for Kaishon's party. No one had any....except for me.

Oh, and 103 carbs in the oreo blizzard? No freaking way! I can't wait to hear how you did this week! I have been praying for you every day because I know that diets are stressful and crazy at first!

Quince is doing good this week. Andrea took off from work last week to get him adjusted. It takes her about an hour in the morning to get him ready for the day.

I love taco salad and the cheese shell seems to be such a great idea. I will definitely be trying these soon although I need the salsa and to control my portion.
Damn this being accountable for my weight loss.

FYI PP, and those who don't follow the Atkins diet. Portion control isn't an issue. that's what makes it so nice. Just keeping the carbs under control.

Rebeckah, please post your recipe for carb free meatloaf!! I'm sure others would be interested too.

Yes, I know. CBW needs to get out more or whatever. Where "whatever" equals Grandma J's picture is HILARIOUS.

Man, oh man, I wish I would have taken pictures so I could do a whole nice post on the no carb meatloaf...

I fell off the wagon this weekend. Bread and pasta aren't really my problem. It's sugar in ice cream and cake!

I don't read any of those celebrity blogs either. I just needed to post about something since all I have been posting about is Kaishon's Birthday : ). If I had to be one though I wouldn't mind being Angelina Jolie. She is very pretty, she adopts children, she gives hugely to charities and she is married to Brad Pitt : ).
